Easy Pleasy Peach Cobbler

I love incorporating fruit into my recipes, but dislike spending lots of time with prep work that sometimes involves using many different ingredients. Over the holiday weekend, I created this easy Peach Cobbler recipe that is quick to prepare and super flavorful.


Easy Pleasy Peach Cobbler 🍑


Peaches:

2 lbs frozen peaches

1/3 cup toasted or raw pecans

3 tbsp brown sugar

3 tbsp maple syrup

1 tbsp corn starch


Topping:

1/2 cup vegan butter or coconut oil, melted

1/2 cup brown sugar

1 teaspoon pure vanilla extract

1 tablespoon oat milk

1/2 cup Almond Flour

1/2 cup all purpose flour 1 teaspoon baking powder

1/8 teaspoon salt


Preheat the oven to 375 degrees F and lightly grease a 2 quart baking dish with a neutral oil. A 8x8 dish will work as well.

Combine peaches, pecan, brown sugar, maple syrup, in a large bowl and toss well. Add the corn starch and toss again, making sure it coats the blueberries and pecans.

In a large bowl, mix together the melted vegan butter, sugar, vanilla and soy milk. Now add the almond and all purpose flour, baking powder and salt and mix to combine. The batter will be similar to a cookie dough consistency.

Using a spatula or large spoon, sprinkle the batter on top of the peaches and spread out a little bit. It doesn't have to be perfect, or cover all of the peaches.

Bake for 30-40minutes, until the crust is slightly golden and the peaches are bubbling.
